Vegan Salad Recipe: Kale Caesar Salad

Hey everyone! I hope you all had a wonderful May and that you will have an even better June!

I recently was craving a homemade kale Caesar, but I didn’t have all of the ingredients from the recipe that I usually follow and I also wanted something with more mustard in it as I really love the tartness so I decided to experiment. I am happy to report that my experiment turned out! It actually, in my opinion is better than the original recipe, if I do say so myself! The best part is that it has no added oil! Woohoo! Here is my take on Caesar Salad Dressing:

  • 1/2 cup of cashews
  • 1/4 cup + 1 TBSP of water
  • 1 TBSP of lemon juice
  • 1/2 TBSP of Dijon mustard
  • 1/2 TBSP of whole grain mustard
  • 1/2 tsp of garlic powder
  • 1 small garlic clove
  • 1-2 TBSP of nutritional yeast
  • 1/4 tsp of salt

Blend everything in the blender and serve.

Tip: to make sure you got every last drop of this dressing, make sure you lick your blender clean and get your fingers all up in there 🙂
