I am not much of a pie person and I am also not much of a pumpkin person so I guess it would seem odd that one of my favourite desserts is pumpkin pie. I remember when I was a little girl, my grandma would have us over for Christmas and she would always make pumpkin pie. I never ate it because I always thought that it would be gross. I refused to try it and instead, I helped myself to some vanilla bean ice cream. Eventually I had it one year at Christmas time and oh boy did my world change. The key ingredient, in my opinion, is clove. I don’t care if you think that there is enough clove in the pumpkin spice mix because I can surely tell you that there isn’t.
I found a pumpkin pie recipe and decided to make it. I added a teaspoon of vanilla along with 1/8 teaspoon of ground clove. I also used coconut oil instead of olive oil. I swapped the brown sugar for coconut sugar and used regular flour instead of gluten-free flour. THIS. RECIPE. TURNED. OUT.
I always top my pumpkin pie off with some coconut cool whip and it was so delicious that I came back for seconds. Okay, thirds, if I am being honest.
If I do say so, holy smokes! This recipe is amazing! You all need to stop what you are doing right now and make this.
