Hey everyone! I have a sweet treat for you this week! I am normally not a sweets person, although I do enjoy the occasional dessert. This is one of the few things that I really do enjoy because it’s not too sweet and it’s very delicious. It also doesn’t make me feel sluggish after eating it because it’s mostly healthy.
I like to make a few modifications to this recipe. Whenever a baking recipe calls for any type of oil, I really like to substitute it for coconut oil. I also swapped the regular sugar for coconut sugar. Generally, I use mini semi-sweet chocolate chips instead of the dark chocolate chips as I find that it gives the muffins a bit more life. This recipe is originally made into a bread loaf, but I prefer to make them into muffins to ensure that it’s baked and for easy snacking. Whenever I try to make a loaf, it is never fully cooked in the middle.
If you are feeling fancy, you can turn these muffins into cupcakes or even a cake. I am sure that these would even be good with chocolate or hazelnut frosting. You can also go with the traditional vanilla icing and I bet it would be spectacular.
A unique thing that I like about this recipe is that there is applesauce in it. I believe that it’s a substitute for oil, which I think is so cool! How awesome is that?
