Vegan Dinner Recipe: Street Tacos

Hello everyone! I hope you had a nice long weekend! Today I am going to be sharing a recipe review/my take on a recipe. This recipe is just in time for taco Tuesday (my favourite!).

My thoughts on the recipe is simple – yum! However, this recipe is sooo much better (in my opinion) if you sub half of the lentils for potatoes. If you are feeling extra lazy (me all of the time), you can just use unflavoured hash browns so you don’t have to do much cutting (I would not recommend boiling the hash browns. You can fry them up with the onions). Subbing half of the lentils for potatoes will give the recipe more texture. If you do this, the only thing you will need to food process are the oats. I also just mix in the onions to the recipe rather than having them on the top. You can also add more onions to this recipe, if you like. I like to pair these tacos with sour cream and guacamole. You can then top the taco off with cilantro and a squeeze of lime juice. I love the creaminess added from the sour cream and the guacamole. The cilantro and the squeeze of lime juice help bring out the flavours of the filling.
