Vegan Dinner Recipe: Pad Thai

Hello everyone! Sorry it’s been awhile. I was recently on a work vacation in Las Vegas and things didn’t go as planned. I wanted to post some reviews on things like: the food, the hotel, my hiking trip, the show I went to, but I want to be honest with my blog posts. I also don’t want to post any negative reviews. With that being said, I won’t be posting any blog posts about my trip. It wasn’t bad, I just want these posts to be about things that I truly like a lot and would do/eat again (I have really high and particular standards) Anyway, onto the recipe review.

There is a restaurant near my apartment that serves the best take-out Pad Thai! The only downside is that it is somewhat expensive. Obviously, a girl can’t break her budget to eat Pad Thai once a week.

Lucky for us, there is a vegan recipe out there that tastes just as good as the take-out version. Another plus, apart from saving money, is that you can customize it as much as you want. Don’t like broccoli? Don’t add it. Want more lime? Add it.

I personally like to add 2-3 TBSP extra of the mushroom sauce for added flavor. I also like to grate (or food process) the carrots and add them at the end.

To top it all off, I like to add salted peanuts. You can buy whole peanuts and just blend or food process them to get them to your preferred size.
